Yerba mate is a traditional South American beverage made from the dried leaves of Ilex paraguariensis a tree native to the subtropical forests of Argentina Paraguay Uruguay and Brazil. Drinking mate is a central social and cultural tradition in these countries where it is shared communally from a gourd through a metal straw called a bombilla. It contains caffeine theobromine and theophylline giving it an energising quality that has been valued for centuries. It has a strong grassy and slightly bitter flavour.
