Wood betony was one of the most highly regarded herbs of the European Middle Ages and was the subject of extravagant praise from medieval herbalists. It was a staple of Anglo-Saxon herbal medicine and was cultivated in virtually every monastery garden across medieval Europe. The herb fell out of fashion in later centuries but is currently enjoying a revival of interest in western herbal practice. It has a slightly bitter astringent taste and is prepared as an infusion.
