Irish Moss is a red algae that grows along the rocky Atlantic coastlines of Ireland and the British Isles. It has been harvested and used as a food source in Ireland for centuries particularly during times of famine. Traditionally it was boiled with milk and sweetened to make a nourishing drink and blancmange-like dessert. It is rich in carrageenan which gives it a gel-forming quality when cooked.
